After my upgrade to High Sierra, when I open my encrypted doc and enter my password, I only see the Root of the list of servers. All servers are not listed. I keep my file in dropbox and the file has not changed in a month.

that’s because your objects are filtered by favorites, as can be seen in the screenshot you attached. At the very top it says “Filtered by: Favorites”.
To disable this filter, click the little star button on the bottom of the navigation panel.
